Demo question.

New member and Neat Video user here. Still learning the ins and outs of the program, and trying the demo before committing to the full version.
I do have a quick question, though.

I understand that in the demo, you can only render whatever will fit in the render box. The box appears in the middle of the video. Is it possible to move that box?
I shot a video for a friend, and most of the action happens towards the left of the screen. So I'm wondering if I could render that area of the video.

One workaround would be to crop the video to keep only the area you want.

Yes, that is the only option that can work in any editing application. Some editing applications may offer tools to limit the area of interest on the fly, but that is rather an exception than rule.
