Please excuse my ignorance, as I am a new (and very impressed) Neat Image user. If I can sample the noise in an image, wouldn't that be more accurate than a pre-built Noise Profile? Should I expect my camera (Nikon CP 5700) to produce similar noise characteristics for all images? (This does not seem reasonable to expect)
Maybe this will become more apparent to me as I use NI more.

Yes, building your own noise profiles will enable more accurate filtration that with pre-built profiles. Please see the user guide for details on profiling, in particular the section on building a profile for specific device mode.
Yes, noise in different shooting modes of the same camera can be very different. Therefore you need to build profiles for different modes that you use. This is also explained in details in the user guide.
